The color of the carved part, from my experience, gets more yellow as you increase exposure and more orange as you decrease it. In the photo with the Deal Zombie card, there were essentially three light sources. One was some backyard string lights, the second was votive candles placed inside the pumpkin, and the third was a small flashlight, diffused by my hand, that gave the Deal Zombie card a little more light to make it easier to read. Because I was trying to expose to show the pumpkin, there is relatively little light emitting from inside the pumpkin (I think 3 candles in this shot.. I played around with different numbers) and thus it appears toward the more underexposed orange side.

The tiny sliver that you reference is actually a toothpick. I thought about leaving a sliver of pumpkin above and below the center of the "d", but I decided the toothpick would get out of the way of the design more.
