Honestly, delay gratification on a cheap isn't always a wise thing to do. Simply get the one you know you will be happy with. Example, in my case I had SE model and I was like meh on the specs and overly careful that it can get scratched easily. I knew I wanted the best of the best. I don't want remorse and then waited for Slickdeals to list the all time record low price as new model will be out as well

Is it worth getting Apple care for open box Apple Watch?
In my opinion, no only because I KNOW how to take care of the watch from any physical damage. While apple care does cover software issues that I have no knowledge of fixing it.
Secondly the deduction at the Apple Store is expensive from the get go that I rather spend the price of the deduction on a newer watch or something else depends on how bad it got damage.
Apple watch depreciate every year after all even though it mean nothing to me because I'm keeping it forever until it become useless. You'll be surprised how many folks are still rocking on their Series 1 nowadays....
overall, in your case, only you know if it worth spending for the Apple Care from the psychological and financial standpoint. just know it is a prepaid insurance of unforeseen circumstances. it a loss if it not used.
