Now I'm trying to decide on the CPU. Still waffling between 2500/2550/2600 (don't need 2600k or 2700 because I don't need the IGP)

well the 2600k/2700k would be to OC
if you don't buy a "k" processor, you won't be able to OC the chip much at all.
