The real problem that you'll face is if one set of adults wants to go to one park and another to a different park and yet everyone wants to meet up for dinner - you're dining options are then limited to Downtown Disney (crying shame, they've got fantastic food) or the restaurants in the hotels on-property (again, crying shame...) Other personal opinions when you don't have a Park Hopper Animal Kingdom is a half-day park, at best and is always the first to close - save this one for day 3 when the kids (and probably adults too) will certainly need a nap and can spend the afternoon/evening at the hotel pool or Downtown Disney. Use Magic Hours to your advantage and remember that you can exit and re-enter the park as many times as you want on that particular day. For instance, Magic Kingdom is open until 12 or 1 AM on many nights in the summer and can be a ghost town after Wishes is over. Spend the day there, do dinner with the group, and then head back for the show and you can do nearly everything in the park at least one more time. BUT!!! Since it's a family event, you might want to contact Disney to see what options you might have for a group function (you're probably too small, but never hurts to ask). Disney loves having groups and makes special options available - from catered dining to private areas during the evening shows, they'll help a trip become even more memorable. I've done this before for 70 people, many of whom it was their first time, with ages ranging from 3 - 90 and it's a trip that everyone still talks about. *I am not your attorney.
