safeway $10 coupon after $75 purchase, 12/16-12/18
Every year at this time safeway has an item I buy in qty & stock the freezer when it goes on sale. It's their standing rib roast a.k.a. bone in prime rib. Years past it dropped to $4.99/lb, this year its $5.99/lb with a $10 coupon good for next purchase, after $75 purchase december 16-18th, coupons good through december 26th.
I combined a large 3 rib roast ~$45 & a spiral cut ham (for new years) ~$30 & get a coupon & go back & buy again. You may need to order & pay for the final xmas cut of prime rib, arranging pick-up next week so it's still fresh for prep on the 25th.
Preparing this item was not for the faint of heart. The risk is that you'll overcook it OR miscalculate the time making dinner hours late.
Fear no more, I've done it sucessfully for 5 years this way:
PERFECT STANDING RIB ROAST
Choose at least 3 to 4 pound rib roast, allow 3/4 to 1 pound per person. Anytime during the day (I start it ~10:00AM) place the room temperature roast sprinkled with salt and pepper and seasoned salts on a rack in an open pan for exactly 45 minutes in a preheated 375 degree oven.
Do not add water, do not cover. Do not baste. Turn off oven, leave roast in oven with door closed. Turn oven on for 45 minutes before serving, add 1 cup water to pan dripping for Au juice. Tip for 10 to 12 pound roast, allow 60 to 70 minutes for second period.
