if you want to do the power over ethernet yes but I would skip it as long as you had power where the AP was going to be.

If you are using an injector you should be able to use it with a standard switch. And as for coverage you aren't going to know until you get the device in place and do a site survey. I just chose 3 as a safe bet scenario. You can buy one, do the site survey and if it's not enough you can add another, etc.

Also, just because you can physically cover your location with a single AP doesn't mean that's all you need. You can saturate an AP with as little as 10 simultaneous connections - if you don't think you'll ever have more than that many people connecting you might be good. Otherwise brace yourself for speed complaints.
