Well, I don't eat steak or fillet salmon. I'm half Filipino and half Lebanese, I didn't grow up with that type of menu.

I like using a 6" chef knife. It's much easier to control than an 8"+. About the only thing I use an 8"+ knife for is cutting melons. It's not the size that matters, it's how you use it. Like a lot of things, a big long fat knife is amazing to look at, but what do you actually do with it? You could hurt somebody with one of those big ones.

Coupon worked for me too, including some leftover GC balance. Good timing .. I have both Wusthof Classic, and also Shuns -- I like them both, but they are obviously different. I had been looking for a Wusthof Classic 4-5 inch utility knife, and those cost about $40-60 as a single knife, so getting this whole set for $72 (with discount) is pretty nice for me. I like the "small block" idea and might take it with me as my basic Kitchen set on RV trips. And in the RV I'd only have room for a small cutting board so the 6" chef knife is actually good for that too!

lighter doesn't give you any more control over a cut. maybe after hours of cutting (aka, a prep chef), but a bit more of heft by definition will give you more control.

an 8" chef is far more usable 'on average' - for an everyday, all-in-one knife. the 6" will be too small for some tasks, but the 8" won't... in other words, a bit 'too-big' doesn't matter. a bit 'too-small' does. better to error on the knife that is usable more often if it's you're only knife. this size knife is almost a paring knife in real life use.

after spending time at a nice knife store, the guy working there put a few knives in my hand and twisted to blade. the 'non' classic wustof's (classic, etc) tended to slip quite a bit more in my hand - hence why the classic is my preference. you do NOT want a knife slipping sideways (or any direction) in your hand while cutting. a test that not many people consider...

Sorry, but I'm not following. How does more weight=easier to control? The only time I prefer a heavy blade is sustained chopping, like prep. For anything else, certainly any detail work, a lighter blade translates into less force required to shift and manipulate.

Forgive me if I'm misunderstanding, but it seems to me that, by your definition, a claymore would be a better dueling sword than a rapier.

I agree as well. 6" is pretty small for a chef's knife, but I think it wouldn't be too much trouble if you keep it sharp.
