While I understand why you would logically think this way, in practice it simply isn't true. Cast Iron is such a poor conductor of heat that even with pre-heating the grill, you will still get hot and cold spots, since the grate directly above the flame will heat far more than the grate that isn't above the flame. This is an interesting article on heat variation across the surface of a cast iron pan (vs other materials) which shows that there can be large temperature variances. http://chowhound.chow. This same logic applies to CI grill grates though - since the iron is such a poor conductor heat does not move evenly or efficiently from the flame heated portion of the grill to the non flame heated portion. |
