You have to prove you're a student or teacher with an ID, paystub, or current transcripts, among other things

Not completely true and not completely false. There is no upgrade path to a future student edition, but....

Per adobe's website (first link I posted above):
Can I upgrade my Adobe Student and Teacher Edition software?
Adobe Student and Teacher Edition software can be upgraded to a commercial version when the user is no longer a student or teacher.

I had education versions several years ago that functioned completely like non-ed versions, and I upgraded them easily. That was 15 years ago, but it looks like it's the same policy now.

Not true. Per the first link I posted above:

Yes. You may purchase a Student and Teacher Edition for personal as well as commercial use.
