I wouldn't worry about it. These are good, sharp knives but not "out-of-this-universe" sharp.

Sharper knives are actually less dangerous to use. I would probably recommend the 8 pack though assuming they come with covers for storage.

I'd like to get the 8-piece set if it's still available, Costco near me only has the 6-piece knive set (comes with 6 sheaths). (UPC # is 0 87171 04275 6 if that helps anyone.)
