Simply because the only expansion card worth considering is a single video card. For many applications, not even that is required. Everything else falls into one niche or the other. So why bother with a full case? A bigger case just gives you more empty space to do nothing with and is definitely less convenient when you want to move the system.
This works as htpc, lite server, gaming, or all three with the right motherboard. Another 6 expansion slots would be pointless.

I just can't figure out why you'd pay lots of money for mITX and them put it in a box the same size as a (conceivably) less pricey uATX. If you're not trying to build a tiny machine, use a larger board which (generally) has more features at a cheaper price. To me, it's like putting off road tires on a Prius.
