I wouldn't consider myself a gamer either and I get an hour or two every day after work. Like most people said here, you get the hang of it once you die a couple of times. You learn from the death instead of it being a complete waste. The first few hours was quite frustrating. I played the first level (1-1) for about 2-3 hours but it became quite easy after that. You need to use block a lot and learn when to use the regular attack or the strong attack. Keep an eye on the stamina as well. Let it build up before you attack. You can't rush through the levels. You have to plan them in your head. Step back a little and learn the moves of the enemy and attack. It's a difficult game but it's not impossible.
Demons Souls literally sat on my shelf for 1+ year collecting dust before I decided to get back into it and go for the platinum. If you don't mind following a guide (you can search for them, including one where you can get the plat in 10-20 hours), the game can actually be quite easy. Just be observant, have patience, and don't go running trough the levels button mashing. I died less than 10 times total, beginning to end. Plus it helps to start as Royalty so you have some magic from the beginning.
