Have you used something like a Kill-a-watt to measure how much power your system is actually using? I just tested my 2500K @ 4.3GHz with a single 6970 and the whole system never drew more than 299W from the wall while gaming. The overclock hardly made any difference in the power usage. My 24" Dell U2412 LED-LCD only draws about 30W at most.
I use an APC BE750G 750 VA 450 Watts for my system. I went with this one just to help stabilize some sketchy power from the wall in an apartment and to give me time to shut down the computer in case of power loss during a storm. It sounds like you have similar needs and would be fine with a lower VA rating.
I don't know what was going on the first time of an extended power outage and it "only" showed about 25 minutes of power, maybe the battery needed some cycles on it or something, but the power went out the other week, and just surfing and not doing anything crazy, it stayed on for like 45 minutes with desktop, one LCD, router, and modem.
