 Alton Brown's way or no way. We have a special igloo drink cooler that we use only for turkey brining. It keeps the temperature low enough to be safe outside of the fridge in Houston where it can be in the 80s on Thanksgiving.

In an upright smoker. Put the turkey on the lower rack and a ham on the rack above it. While it cooks the juices from the ham will drip down on the turkey and it will be delicious! I do this every thanksgiving and Christmas.

Conventional oven, no green eggs or frying....
That Alton Brown recipe looks good (I usually use his country/city ham recipe for Easter), but doesn't mention cooking it upside down. Also our bird will be ~ 2 times the size of what's called for in the recipe. Last edited by Dr. J; 11-12-2012 at 01:11 PM.. |
