Good question. I would use some form of olive oil (#1 choice), peanut oil (minimally processed, expeller pressed), or at the least canola oil as long it is non-GMO and expeller pressed. The problem Chipotle faces is using a fat that is vegan friendly which rules out butter. For frying, I'd use the traditional fats like lard, tallow, or virgin coconut oil, assuming they are non-hydrogenated. Of course all of these are more expensive that refined vegetable oil so the change would raise prices, but consumers have already demonstrated they are willing to spend more for higher quality food.
