No, it doesn't need to be stored in ammo cans, keeping it away from the elements it will keep for a long time. Most ammo cans aren't airtight anyway.
Grain count doesn't really matter as long as the dimensions are right. Sometimes the grain count decreases because the bullet has a different shape- for instance, less lead in a hollow point. Watch out for +P or "super" rounds as they are not the same size as a standard round of that size and your gun may not be made for it.
