I used these at my daughter's 4th birthday party to make candy sushi and they were a HUGE hit. I used rice krispy treats and molded them inside with a trough down the middle, put the "sushi" (sweedish fish, gummy worms, etc) closed it up, microwaved it for about 15 seconds which softens the rkt and melts the fish nicely and then do the compression. Push it out and wrap it with Froot By The Foot and bingo - candy sushi. We did this for the school bake sale too and added shaved dried apricots for the "ginger" and green icing for the "wasabi" and put it all in sushi containers that the supermarket donated.
Ha, I don't have kids but that sounds awesome. Perhaps my Niece will have a surprise at her 3rd bday
Rolling sushi is very easy, and you can learn how to do it with a kitchen towel on youtube in 10 minutes.
If you want to roll like a pro, spend $2 on the bamboo sushi mat that they actually use. While you're at the Asian grocer, pick up nice sticky rice and save a load of cash over the grocery store's selection.
