Let's build Nana a new PC!

So, I go to my grandma's every couple of weeks to eat dinner, watch terrible movies, and generally keep things kosher. The last few times I've been there, however, I've been forced to tinker with her horrible, horrible 2003 Windows XP PC. The problems began when a Comcast tech installed a bunch of their bloatware, but suffice it to say they run deeper than that, and I never want to look at that thing again. Accordingly, I've decided to cannibalize my old desktop to build her a new setup.

Here's what I have to work with:

Asus M4a79XTD motherboard
3.4 mhz Phenom II BE
4x2gb G.Skill DDR3 1600 RAM
Sapphire 4850x2 video
60 GB SSD
750 GB 7200 rpm HDD
Dead OCZ 700w PSU (don't buy--this is my second replacement of the same model...I'd rather just reup for a new one).
19" LCD monitor (not on hand, can't remember model).

So I'm thinking the 4850x2 can go, since Nana won't be fragging in her FPS pain-cave. If my workaday math is correct, this should drop the required power by 200+w, which means I can probably afford to get a decent lower-wattage PSU.

TLDR: Does anyone have any suggestions for (1) a PSU; and (2) a decent all-purpose video card that would be compatible with this setup?

Ugh...I'm getting a little bit jealous. I have a great laptop, so I really don't need a desktop, but I feel like this is a bit overpowered for a Windows 8 email & word processing computer. Should I spring for a lower tier combo from Newegg and swap out the mobo/CPU? http://www.amazon.com/gp/product/...02_s00_i00 - video card i picked up for her. http://www.amazon.com/gp/product/...02_s00_i01 - psu (I realize these aren't the greatest, but they're more than adequate for her needs).
