The chef's classic line was my first cookware set. Having partially clad frying pans results in carbonized grease splatter on the thin walls of the pan in certain hot spots, resistant to deglazing or normal scrubbing. I shouldn't need to use barkeepers friend every time I pan fry a chicken breast or pork chop. It's just an inherent flaw at high heat.
For other non-searing applications, the set works just fine. Just buy/use a different pan for searing.
I have this exact same set minus a few pieces, and I remember when I bought it a little over a year ago, this set was 18/10 steel. The price is pretty good, and this set does work. Thick bottoms make it so the heat is balanced even with the crappy coils in my house. They clean pretty easily with some barkeepers friend if you can't stand stains.
Yeah, you could get the Tramontina or whatever Wal Mart brand for a little more, but you could also do worse than this set. I could see this stuff lasting me a lifetime and don't see any real need to replace them.
Dang the lids aren't glass. My wife was complaining she wanted new stainless steel pans but she insisted on glass lids last time we spoke about it. Oh well, wait for the next stainless steel pan slickdeal!
