EDIT: I am currently looking to do gaming. My processor is more than strong enough to handle even the best cards, but I want to keep my graphics card purchasing below $250 if possible
No, in almost all situations a single card will be faster for the same cost. Most games really don't take advantage of the second card and eyefinity (the main reason you would need a second card to drive more pixels) is so wonky with most stuff that I just ended up disabling it.
I have a pair of these exact same cards that I bought when the 7870 was like the bottom of the high end cards. I wish I had stuck with one or gone with a single more expensive card. The performance is fine with this card still but for being a high end card a year ago it's been slightly underwhelming in running games on the highest settings.
From personal experience I would really recommend spending that $250 on a single card and you'll get a lot more bang for your buck. Two 7870s in most games won't even be a 10% increase in performance and it's not worth the added issues.
