I got this offer, too, and I did it and got my 2,000 points about two days later.

I got another email from them saying they were reminding me about this deal. So, I asked MyPoints if this meant I was eligible to do it again. They replied that I was if it was a different offer number, and lo and behold, it IS a different offer number! I'm going to try for it again; with the $1 ibotta Snapple rebate and the 50c printable Snapple coupon, it's not a bad deal.
