Is it possible to somehow disable my TV from showing video and only play sound via an HDMI cable?

I don't think so, but I guess it could be possible. What TV do you have? And also, what are you trying to accomplish? The more info you provide, the better we can help you come up with a solution.

Isn't HDMI just DVI & digital audio in the same cable? If you had a sacrificeable HDMI cable laying around you could take it apart and clip some/all of the video leads and leave the audio leads alone; see what happens

Or get something like this:

It would make more sense to use a home theater / audio video receiver for this task and it would sound better. Feed the hdmi cable through the receiver, connect receiver to tv. use better speakers and amp inside receiver for sound, leave tv off.

It's possible to extract the audio signal from an hdmi receiver with a special device and convert it to coaxial or toslink(this doesn't alter the hdmi signal). IF it were possible, you'd have to swap some cables any time you wanted video.
