Google Photos - How to label a face?

I recently uploaded my photo library to google photos. Though it did a pretty good job at facial recognition, google is grouping 2 separate people under the same name. I am able to remove one of the person from these photos, but for the life of me, I cant seem to find how to add a name for this removed person.

This removed person is not even showing even when I select More (see below under instructions).

I have already googled, but none of the instructions seem to be working. I might be missing something very obvious. This is what google search shows:

Find & label people

Search for people in your photos by seeing similar faces grouped together. Note that this feature is not available in certain countries.

Step 1: Go to the search page

Android or iOS app:

Open the Google Photos app .
At the bottom right, touch the search icon .
(If you don't see it, open the menu > touch Photos, then look for it.)

Step 2: Find faces

Under the People section, select a person's face to see more photos of them.

If you don't see the People section, that means this feature is not available in your country or you turned it off in settings.
If you don't see the person you're looking for, select More.

Anyone knows how to name this person??
