Will my phone work well in France? Which is the best network for LTE?

So I have an unlocked AT&T Galaxy S5 (SM-G900A). Based on Phonearena [phonearena.com], My phone have these FDD LTE bands: 700 (band 17), 850 (band 5), 1700/2100 (band 4), 1800 (band 3), 1900 (band 2), 2100 (band 1), 2600 (band 7) MHz.

I am going to be in France for a month for work, so I am planning on picking up a prepaid SIM card. I am looking at the list of LTE network bands [wikipedia.org] by each carrier in France and it seems that the only one I have in common is Band 7 and Bouygues also have BAND 3. So is it safe to assume that I would have the "best" LTE service with Bouygues? I am unsure if I am reading this right.

Some of the LTE band operate in pairs, hard to predict coverage with that phone. Assuming no contract, you may want to port you primary phone number to google voice or ring.to so you can make/receive calls via wifi from your US number.

Your G S5 will probably have better 2 or 3G service than LTE in France. Some phones like recent Nexus and iPhones support more international bands
