The lowest fares I'm getting are around $670 RT. Any idea on which days are < $500?

Generally leave on a Tuesday and come back on a Tues-Wed-Thurs. also use the ITA matrix for a calendar breakdown of when flights are cheapest. Then use that info to book flights at the carrier websites.

careful with checked bags on air berlin. flew them from JTR to CDG through VIE last year and they lost the bags of EVERYONE ON THE FLIGHT from VIE to CDG. It took me two weeks and 100+ calls (usually no one answers), to get my stuff back and my fiancee's stuff back. The bags were only a little destroyed. I know a lot of carriers lose bag, but trying to get them back was pretty miserable.

People should know that Air Berlin is a budget airline. As in Ryan Air/EasyJet budget. Also, this price is pretty much the price you can find many times on WOW with no sale. WOW is another Euro budget airline.
