It's a great mixer and also good for newbs. All analog mixers are basically the same. Things start to get more complicated when you go digital or introduce other fx equipment.

these could be so cool if they functioned more fully as an interface where you can record more than two audio inputs at the same time.

Instead you get this:
Format: USB 1.1
I/O: Stereo Input / Stereo Output
A/D/A: 16 Bit, 44.1 kHz / 48 kHz

True but at this price how can you complain? You'd be best getting a separate interface that handles (at least) 24/96 anyway

Got the 12 in one of the previous deals. I was surprised that using Asio4all driver I was able to lay tracks down into my DAW while monitoring with virtually no latency. Granted your limited by the mixers A/D specs, but for many it will work. I just had to play a bit to get the Asio4all set up properly.

There are so many ways to do this. I don't know where to point you towards, but maybe there are some audio production youtubes you could watch. For one, there are multiple outputs: tape out, fx send, headphone out, stereo out, monitor out, stereo return, etc. Another way to have separate sources sent to different devices is to use your stereo channels as two mono channels. Anyways, maybe what you want is a bus or a switch if those solutions don't work for you.

Yeah, but if you want an interface to a computer, aren't those all analog interfaces, not digital through USB? That doesn't help much when working with a DAW.

Can someone please explain what this is used for? If I wish to make YouTube videos, would this enrich the sound of the video? Can I adjust my voice in the video by using this? I will be using a Blue Yeti Pro with it. Thanks in advance!

I got the fx8v2 the last time around and i must warn that the USB input does not have a slider for volume control, only a knob, so if you plan on using a USB source (laptop, mp3 player) as a channel, the knobs are a poor option for sensitive volume adjustments - so the karaoke suggestion will work, but will be difficult to adjust the karaoke source track if it is USB.
