The other color handles (same knife) are at the $35 price point already on Amazon. Excellent knife for the price - price jumped on the black after the knife was top rated by Cook's Illustrated/America's Test Kitchen.

For home use the handle colors makes little difference as long as you clean and sanitize the knife properly, But In A Professional Setting.

Red > Meat
Blue > Fish
Yellow > Poultry

Is crazy, I have two of these, got one for $19, and the other for $22, but like you said, that was a few years ago
