Both are great knives but have slightly different purposes.

Chef's knives' center of gravity is slightly in front of the handle with a curve which is more suited for slicing/rocking for finer precision. The pointed tip also allows for additional precise cutting methods.

Santokus' center of gravity is more in the handle and with the flatter blade allows for better chopping.

Both have their advantagesbut overall though, I would choose a chef knife for more all-purpose use.
