I used this knife for a few days last month and it's very similar to my Shun vg10 santoku. It's longer and little thinner and not as tall, so it feels even better. It's not quote as narrow as a slicing knife but also narrower than a chefs knife.

I haven't sharpened it yet on my 1000, 3000, and 5000 chosera waterstones, but my shun gets a pretty good edge.

You'd be better off preordering a Misen, which is getting rave reviews by people extremely well-established in the culinary industry.

For a China made knife price seems high, If the knife was made in Japan with Japanese steel I think the price would be good.

not doubing those people... i can only tell you what I think of it. I do own few $200 sharpening stores and few $300 knives. Are those better? it depends and depends has many caveats, that I could spend 30 min typing.

There are hardly any japan made knives these days, Even shun moved most of their cheaper lines there.


I would also point out that simply japan made from 'one region' is not exactly better these days...
