And I just preordered the joule for 150, ugh. I guess I'll have to try both and see which I like more or maybe keep both.

A cheap option to do sous vide without all the frills is to get a Digital Temperature Controller from ebay (white machine sold by comelili) and hook it up to a crockpot. Been using that setup for steak and ribs and turned out well.

Nostalgia. Grandma cooked everything well-done. In her defense, when she was growing up food borne illnesses were much more common.

But did she really have to cook the home grown veggies to mush? C'mon Grams!

I have this Anova, I've had generally good experiences with it except for one time I set it for a long unattended cook (via wifi, 24hr brisket@154) and it decided to shut off for some still unknown reason. I luckily happened to notice it before the bath got below 140, but it's made me wary about doing multi-day cooks.
