Ingredients

Kind of a specialty product, but I thought there might be some bakers or other people who could use this. A case is a LOT of blueberry filling. EEK! This is a great price though.

It has water in it. Probably 30% of water and some other crap.
Just saw the review saying "90% of the can was filling, maybe 10% of the can had very very small blueberries."

I saw that. Some reviews are good though... sort of a crap shoot. For that price though... ?

Well, you can use the filling to make cheesecake, cookie.
The point here is that it has very little of Blueberry.
Some 5 star reviewers also said it.
"it contains small tasty blueberries"

I fear xxxHolic is most probably right. Blueberries, while not as high in natural pectin (gelling agent, what makes it a filling and not a syrup) have enough that you can make jam and jelly without anything except sugar and fruit. The fact that the third ingredient is water more than likely means that it is, while under 33% of the contents, as close to that as they could get. Plus it may well have a LOT of corn starch (fifth ingredient so up to 20%, it's a thickening agent and if I have a ham soup with fresh greens that I don't want to cook down, I add two tablespoons for five quarts of soup to thicken it into a stew EEK!) and Gellan Gum, another thickening agent. So you have a fruit that will naturally gel without any thickening agents, that has enough water added they need to add two, one of which may well be in substantial amounts... Nono
