I have 1070 Nvidia. I'd like to hear your thoughts on the below setups and which one would you recommend for office work, entertainment (movies, surfing), very light gaming, and photo editing.

Option:
A: 1x LG 34UM95-C 34" 21:9 3440 x 1440 & 2x LG 27UD68 on both sides
B: 1x LG 27UD68 being in the middle of the 2x LG 34UM95
C: 2x LG 34UM95
D: 3x of LG 27UD68

Thanks!

It really depends on what you want to accomplish. I have 1x 27" 4K monitor for gaming and light Adobe work - and I am satisfied.

How is this compared to a 27" 1440p korean monitor from 3 years ago?

It's a lot better in term of color accuracy and pixel density. I have both monitors next to each other and only use this one. Make sure to download the color profile from their website and apply it through the window display option.

Got this from Bestbuy several weeks back, it is amazing, very little light bleed. I watch a ton of movies and the pictures were stunning.

I only game on my GTX970 with settings on low to medium @ 4K and most settings turned off. I get 60FPS in most of the game play.

Does shoving 4k into just 27" inches somehow not cause major image/text/ui scaling issues like I would think?

I bought one of these last month from Best Buy when it was at a similar price. The model they sell has a -W at the end and the base is a silver color. The image quality is great, very bright (I turn it down below 25% brightness, sometimes below 10%). I use it mostly on Displayport with Macbook Pro Retina to get 4k at 60hz. Unfortunately the monitor wobbles a lot with the included stand -- even when I just typed on the glass desk. I put it on another VESA stand and no more wobble. I can't get the HDMI 2.0 to work at 4K 60HZ with a GTX 1060, though it is supposed to and I'm using the monitor's included cable. I'd have rather had the LG 27MC67-B or 27MU67-B (which I had before) to gain an additional displayport, but they're discontinued and not easy to find in stock and pricer, but with the nicer, stabler, adjustable monitor stand.

Hmmm so this freesync works well with your gtx 1070. I'm gonna re-evaluate the rx-480. Get the 1070 instead and match it up with one of these 4k monitors.
