Instead of stimulating only the cochlear nerve as all other headphones do, these also stimulate the vagus nerve. By doing so, your brain is processing auditory information that is in sync to unexpected vagal nerve stimulation. The believed effect of vagal nerve stimulation is parasympathetic nervous system is activated which makes you feel more relaxed.

This may sound like snake oil, but it isn't. The co-founders are a heart surgeon and a pain specialist, and the science behind vagal nerve stimulation is anything but trash. Remember what headphones are - they are devices that transform electrical impulses into kinetic energy which your brain then encodes back to electrical impulses for transmission and processing. The stimulation of another nerve only adds to that transmission.

They're open-air, though how do they compare with ATH-M50?

Looks pretty great, I had to use a rubber band between the arms so it wouldn't fall off the side of my head.

Anyone aware how loud these are to others nearby? Something you'd be able to wear at work, for example? or no?

Can't say anything about the ATH-AD500X but I can confirm that the HD598SE's are absolutely phenomenal. I bought them on Prime days for $109. Best $109 I've spent. Hopefully someone can compare them, because I'm curious how these stack up.
