I use my pi for a network wide ad blocker called pihole. Works very well.
Can be used as a cheap but powerful double din in car entertainment system.

Like NES gaming console, or just install Kano and give it to the kids, home automation or just connect to your WiFi camera and download the photos. Could be used as NAS with open mediastore.

You COULD salvage any old laptop monitor or LCD, but unless the pinouts are well-documented somewhere, it's going to take a lot of work to figure out how to hook it up.

This has HDMI so you can just plug it in, install drivers for the touchscreen, and go. I have no idea how you'd be able to connect a phone screen.

The uses for a rpi are unlimited. At each tv I have one running openelec kodi (XBMC). Also have another running Raspnode for Bitcoin.

I chose to go with more expensive hardware for my router but many choose to use rpis.

They are essentially king for learning how to toy with electronics and software since there are endless project tutorials.

Absolutely not. Totally different interface.
That's the crappy part about displays, they all have their own custom interface.
The funny part is that you can get a full Android smartphone with higher res 5" IPS display and capacitive touch on eBay for $45.
