View Full Version : Stuffed Bell Pepper recipe wanted - NO OT PLEASE

Sorry, I did really try to find the thread somebody posted a bit back that was designated for asking for any cooking/baking help but the searches I ran turned up nothing except threads similar to this one. If somebody else knows where it is, post a link and maybe a mod could merge this thread post into the cooking help thread.

I had a great recipe I always used for Stuffed Bell Peppers, but have forgotten the exact ingredients and can't find my recipe. Have tried a few online ones but didn't much care for any of them as they didn't taste a bit like my old favorite. Mine was just a recipe of my Mom's that she got from her Mom, one popular in the 60's, I think.

If you have a special one you use regularly, would you please post it for me? Not looking for a link to ones on the net ( unless a specific one you got there is the one you prefer and use regularly ) nor cooking sites that list many, as I've already perused those and wasted my time trying some of them, but finding them either bland or weird tasting, or too many odd or unusual ingredients required..

The kind I mean contains cored out green sweet bell peppers stufffed with a mixture of hamburger meat, rice, and spices mostly. I prefer brown rice and not plain white rice, or at least a grain or other natural type of rice.

Don't much care for tomato based recipes as they give me heartburn ( I can take a tiny bit ) and please stay clear of changing the meat to another type or using hot or other types of peppers. Just want an old fashioned, not too greasy, not too spicy, yet very tasty recipe for ordinary stuffed green bell peppers baked in the oven. ( not a huge amount, just around 2-6 unless they could be frozen, which I doubt, as peppers don't fair well that way. ) If you purchase a brand of frozen ones at the grocery store that are ready to bake, I would be willing to try them, but I like to cook so am really looking for just a recipe.

I just use lean ground beef, some partially cooked rice, some finely chopped onion that has been sauteed first in butter, and a pinch of salt. After stuffing the mixture into the peppers, I put them in a shallow baking dish with a little water in the bottom of it. Then I lightly cover the top of the meat with a little catsup, which helps to seal in the moisture and gives it a little more flavor. Then I bake it in a pre-heated oven for 30 minutes or so.

That narrows my family's recipe out. We cover the assembled peppers in tomato juice to cook. Not completely- just about half way, then you baste them when you check on them. Most of the liquid cooks out.

I stuff mine with a variation of Cajun "dirty rice". One pound of hot pork breakfast sausage, one cup of chicken livers, one small onion, chopped, 1/2 cup chopped parsley, 1/2 cup chopped green onions. Fry the sausage, remove it to another bowl. Sautee the chicken livers in the oil left behind from the sausage. Season them to your liking with salt, black/white pepper, paprika, garlic powder, and onion powder. Red pepper is optional. Remove them to the bowl with the sausage and allow it all to cool. Lightly sautee the chopped onion in the skillet, adding a little white wine and/or chicken broth to clean the bottom of the skillet. Prepare cooked/steamed rice separately and allow it to cool. Chop the sausage and chicken livers, then mix them with the rice, onions, and other vegetables.

Stuff your peppers and be happy. :)

I should have offered a few substitution suggestions:
a) use one or two pounds of lean ground chuck instead of the pork sausage. Because it's not seasoned, add 1/2 teaspoon of salt, and 1/4 teaspoon each of white or black pepper, paprika, garlic powder, and onion powder for each pound of meat. Add a pinch or two of red/cayenne pepper if you like.
b) chop red sweet bell pepper and sautee it with the chopped onion. One stalk of celery chopped is good, too.
c) smoked paprika is a really good substitute instead of plain paprika

try allrecipes.com . u can search by rating and see how many people have saved that recipe. read the reviews etc....

Try this recipe. It wouldn't surprise me if this is very, very close to the one your mom made as this is an old recipe from around that time period too:

STUFFED GREEN PEPPERS

4 green peppers
2 lb. lean ground beef
1 pkg. long grain rice
1/3 of large box Velveeta Light
large can diced tomatoes
water to cover rice/ground beef mixture
salt to taste


Cut green peppers in half from stem to bottom. Clean out and wash. Cook in boiling water until done to taste.

Meanwhile, brown ground beef and drain. Add rice, tomatoes with juice, water and salt. Cook until rice is done and liquid is absorbed, stirring occasionally. Stir in Velveeta. Stuff mixture into green pepper halves. Bake in 350 degree oven until hot. Neither green peppers nor rice will cook more in oven. They must be completely cooked before stuffing into peppers. (You can skip the oven step and heat in the microwave, but this alters the taste a little.) If you use a quick cooking rice such as Success, you should alter your water accordingly.
