The 55-300 is a better lens optically but there is no Pentax 55-300 that is Weather Resistant.
Hoya owned Pentax and always wanted the Medical portion of the company. Ricoh bought the camera portion about a year and a half ago and is many times larger than Hoya.
The 18-55 is not a mediocre lens, unless you want to compare it to either prime lenses (single focal length) or to zooms that cost 3-5x as much. Compared to other intro/kit lenses it is at least as good, if not better.
On the 50-200 issue - no it is not better than the 70-200/f2.8 lenses other than it is both MUCH cheaper and weather resistant. For those who have implied there are no 70-200/2.8s for Pentax - Tamron and Sigma make them - I own the Tamron 70-200 and its as sharp as a zoom can be.
I used my 18-55 that came with my K-x for 18 months before upgrading and am still pleased with lots of the pictures from it.
The big advantages of Pentax are these IMHO:
1) backward compatible with literally thousands of different models of lenses with K mounts
2) in body (as opposed to in lens) shake reduction which means all those old lenses from #1 above are IMAGE STABILIZED, you have to pay for that every lens with Canon and Nikon (and many of their lower level lenses do not come with it, you have to pay a premium for it)
3) no other maker has a mid-level dSLR with weather resistance that meets the specs and environmental resistance that the K-30 does.

Not to thread cap , but I didn't see this on your list. K-5 + 18-55 & 50-200 WR for $899 at Adorama.

Since I am paid (weekend professional photographer), I'm leaning toward the K-5 as better than the K-30.
Since I'm not rich, I'll save money with the K-5, rather than the K-5 IIs.
I'm considering the separate lens purchase...but the bundle is very appealing!

Yes it's a good camera at a decent price with the included lenses. However only you can decide if it's right for you. You mention 2 kids. Are they young? Chasing a crawling or toddling kid indoors with a any consumer quality zoom is a recipe for disappointment. Good high iso performance is your friend here but Pentax's weakest point is probably fast auto focus.
If they are older and you are taking travel and /or sports photos I think you would be happier with consumer grade lenses. The added WR is a nice feature for this. Enjoy staying out in the rain while everyone else runs for cover. I use my K-5 to photograph my daughters horse shows (jumping) and it's great although I don't use these specific lenses.
Anyone looking at this might also consider the body only at B&H for $590 and then pick up the lens(es) you want. Take a look at the 18-135 WR and look at pentaxforums for used kit lenses if you want them cheap. Or have fun looking in shops for old 50mm primes because they'll all work with this camera and they can be found dirt cheap. I think Pentax makes plenty of great lenses and where they lack Sigma and Tamron have fine choices, but good lenses are not cheap for any system.
Please don't confuse the issue with talk if L lenses and fast 70-200 zooms. Most of these cost more (some much more) than this whole system.
If you do buy the camera make sure you get the 2 yr extended warranty for $20 from B&H or Adorama. This includes one inspection and cleaning. So at 3 year point send in your camera and get it overhauled to good as new.
Oh and no 50-200 is NOT better than the 70-200 that was brought up

On the other hand Pentax is the only camera which I could use with the kit lens and be happy with it, color and clarity of Canon L Lense. 5 years ago.

Pentax made quite a good choice when they put IS into the body itself, but they're a distant third in the SLR market, they haven't done much since the K5.
It's hard to get really good zooms for it. There are a few, but it depends on what ranges/quality you want. I find a 18-55 walk around and a 70-200 zoom are a good pair for most shooting and Pentax doesn't make one.

WR on mediocre lenses. Not a good deal imho. you'd be better off waitinf or a pentax deal with the 55-300mm which is actually quite good.
Also, Pentax's future is in doubt . they ahven't released a new sensor since the k5 years ago. The camera line has hit financial troubles, and the brand has sold off. their "new" cameras are just repackaged k5 sensors. sony/nikon/canon have all released new sensors recently.
I'm have a pentax and would recommend anyone buying in to the system at this point. The problem, pentax bodies are too few compared to the big boys. I'm seeing less and less deals from 3rd party lens manufacturers like sigma and pentax lens themselves. Also, sigma gives you less lens for the same $ compared to canikon. The HSM motor developed don't come included on the pentax version.
To top it off, the dslr market is shrinking and being consume the m43 market, and mirrorless apsc market (nex and samsung).

Yes, that is a great deal. There just aren't mid-level dSLRs out there that are Weather Resistant like the Pentax K-30 and it comes with two WR lenses too. It is rugged to the point of withstanding lower temperatures than any other dSLR out there. Look at this review if you have doubts
It's also gotten a bunch of awards because of its toughness/price ratio.
