I pay extra for "red" salmon in a can. That stuff tastes good.
I don't believe that the 5oz tuna sized can has 2.5oz of water, but someone correct me on this.

Sorry about that, missed the link to the study the first time I read through the thread.
Interesting results. Not sure what conclusion to draw from them though since I don't know enough about industrial canning. I've done home canning and there isn't any part of it that would add mercury, but things are probably very different on the scale of a canning factory.
My uneducated guess would be that since the samples they were using had lower-than-average mercury levels the additional mercury came from contaminated canning equipment at the Oregon Ocean Seafoods facilities. If, literally, tons of tuna are all being processed on the same line it seems like some amount of mercury would be left on the various conveyer belts and thingamajigs and end up being transferred between samples.
Industrial food processing facilities are pretty gross.
