These were in the clearance section (extra 50% off) of the Williams-Sonoma Outlet in San Marcos, TX, marked $39.99 before discount, so YMMV at other locations.

I picked up one of each in the Twin Cuisine style since it almost matches my 5-star set. There were probably about 40 remaining.

A little surprised nobody gave you any love on this post.
I went to the Wrentham MA outlet mall and grabbed one of the last two Professional S Chef's knives.
There were no Santokus and maybe 50 Twin Cuisines Chef's knives left.
They did not have any 50% off, however.
Still, at $39.99 - 15% off (AAA discount) = $34, I am not complaining.
I needed a Chef's knife to match my Wusthof Classic collection. The Henckels Professional S is identical.
Important to note that these knives are stamped with a "B". This means B stock or B grade items. They will all have some form of blemish or imperfection.
My knife, for instance has a small step in the grind just before the bolster.
I knew this before I bought it and it did not stop me. The food I hack to bits will not know the difference.
Repped, Thumbed up, greened, whatever.

The Las Vegas outlet (at Primm) still has at least ten of the 8" Pro S Chefs knives, for $39.99 - 30% off clearance = ~$28 + tax. I was looking for the Santoku version, but they were out. Still, picked up a spare of the Chefs knife to match my set.

Interesting, comparing the B grade Pro S chefs knife I picked up with the original from my set (purchased about 10 years back) - the only two differences I can see are 1) the wording is stamped on the other side of the blade, and 2) the B knife is much thicker looking down on the top of the knife.

The Pro S has a full tang into the handle, and on most of them the tang is the thickness of the blade as it extends from the handle. On the B knife, the blade is about 50% thicker than the tang. Not sure if that is the fault, as there is no other blemish I can see, but it does make the knife heavier in the hand and more weighted towards the tip of the blade. I actually like the balance and feel of the B knife better than the original!
