I have ordered these in the past, and the steel-cut oatmeal easily keeps for over a year (I keep mine in a costco freezer that's unplugged as an extra pantry and food storage). I am probably on the last 5 pounds out of 50, and I ordered these about 15 months ago (at the cost of about $47 shipped back in Sept. 2011). Mine hasn't gone rancid because the "germ" part seems to have been removed and there aren't "oils" to turn rancid.
Honeyville used to run 20% sale twice a year (once near late Jan. and another time in July). I am holding out for a 20% off sale, since the price has basically gone up from $42 to current price of $57.
It still beats grocery store price of about $1.80 - $2.20/lb but one can't help but wish for those $42 days.
They're actually very good -- don't let the amount of "fat" worry you.
