    I have the 9" scallopped slicing knife. What is the difference between my slicing and this carving knife? Is the carving knife more flexible?

    Just remember after you get to a certain blade quality point, knives are all about what works for you in terms of blade, weight & grip. I've been a chef for 25 years and have used much of what's on the market and spent many hours discussing favorite knives with other chefs. If Shun's work for you, then go for it.

    The metal grips on these don't work well for me, so I'm going to pass. But love knife deals. Thanks!

    shapes are different. they should both be ridge. the only flexible knives are boning/filet, but not all are.

    Shun is great but you can get an equal brand like Ludwig-Schiff which are still made by hand for cheaper, PM if your interested in more info.

    good point. $60-65 is a great price for 8" chefs...

    so i'd wait til 6" drops below $60
