As someone that has been cooking for a long time the cast iron skillet is your best friend. It is in the words of Alton Brown, the 'Little Black Dress' of the culinary world. You really shouldn't be with out one. If you own only one 12" skillet it should be cast iron. It is incredibly easy to clean. Let it cool, fill with water, wait a while and rinse out and scrub a 3m pad, if seasoned (read still black) properly nothing will stick. Done and done.
Now this all clad on sale is great for making dishes with pan sauces. De-glazing a cast iron is not fun. Look at how Guy Fieri cooks and you will get a feel for a good stainless steel skillet works. That all being said all clad is a great name, but you are paying for the name. A good restaurant supply store should have a 12" stainless for about half this price. |

Maybe YOU can't, but I'm sure others can. The OP is already posting some comparisons. I don't know a lot about cooking but maybe someone who does can explain more differences in care and heat transfer and other ways to compare the two. I wouldn't recommend a frying pan to anyone as an investment! Land, industrial machinery, equities etc.. yes. Frying pan, no. thanks miles2912 for proving my point |

1. cast iron pan is not used for sauces, it's for frying, sealing in flavors, like steak, cutlets, breasts, etc,...i also make corn bread in them. 2. ss skillet is for pan sauces, light frying of more gentle things (like fish). you are then able make sauce in pan, finish it with wine, bits of butter and have it reduce to proper consistency and not burn (cause cast iron retains heat a lot more) there are few other things you can use both pans for, but generally it's for different uses. I am not saying, you cannot leave without a $65 pan, but if you were to get it, take care of it, it will last you for 20 years. |
