Memory channels were always confusing to me, but I think if you do that you're running all 3 in single channel.

That is what I was originally thinking - a cheap nettop. However, my thought was that cannibalizing/upgrading would kill 2 birds with 1 stone. But, if i can't do this at around ~$200-250 ish, i guess...

I think your best choice is to go micro ATX if your building for your parents(price/ variety of choices and 4dimm slots so you can use all 3 sticks)
Take this board for $40 as an example only two...
