I have a Rachel Ray set of Teflon coated pans. They aren't very old but the wife uses utensils that scrape the Teflon and I hate it. Which of these see would be better to replace the Teflon?

Surgical grade stainless is titanium. I wouldn't call 18/10, which has 10%, nickel as surgical grade.
