Sorry, I've never been to either of those places, but I highly recommend Carrabba's. My friend from Sicily says it's his favourite Italian restaurant on this side of the pond.
I haven't eaten at Buca enough to compare the two, but I remember Carrabba's being great.
Our one time at Carrabba's was disappointing. Never went back because Buca and Macaroni's were consistently satisfying options. Perhaps we'll try it again.

It's a chain, just like the others. Therefore, your experience will vary depending on various factors such as how well it is managed, how busy they are, which short order cooks are on that night, etc.
We eat at Carraba's when we're looking for a large amount of mediocre Italian food. By mediocre, I don't mean to say that it's bad, but it's nowhere near the quality of an upscale Italian restaurant; it's also nowhere near the price of one either.
The last time we ate there, my pasta tasted like they literally opened a package of Buitoni and mixed in some jarred alfredo and vegetables (Pasta Carraba). My wife's canneloni was slightly warmer than room temp, and maybe one notch above Stouffers in taste and quality. The server was slow and somewhat rude. We generally expect slightly better food and service from Carraba's than that. This was our first visit to a new location nearby... hopefully they can get their act together.

If you ever want authentic Italian food, make your own dishes with lots of seafood and very little sauce. Most of the flavor is from the seafood and cooked into the pasta. Only thing they add over the dish is a little bit of olive oil, but the meal tastes MUCH better.
Might as well try this again though, just turned single, so $10 for both lunch and dinner works out for me!
