great knife but I would wait until William Sonoma has this on sale. If you ruin it, they replace it on the spot.

Unlikely lower. Ccc has the 8" at 120 as lowest back in 2012.

As far as a mother's day gift, please make sure the mother actually knows how to properly use a chef's knife. Stitches isn't a good mother's day gift after the fact. These knives are serious.

But sharper knives lead to less injuries in the kitchen, as the blade requires you to push less and won't slip and chop through a finger. But a laceration with this vs farberware will send you to the ER.

Yes, it will make work easier if you know how to actually use a knife this sharp.
EX: Slipping off a potato because you failed to make a stable base.

Good point. This handle is an eastern style grip. If you are not to familiar with it, make sure to try it out at William Sonoma. They will let you compare it with other knife grips while slicing potatoes or carrots.

Sold out. Also, don't buy this for your mom.. because chances are she's not going to treat it like a thin edge knife needs to be treated. Get her a Wusthof or similar instead.
