you've missed the point of the benefits of 5Ghz if you think it's only about throughput of a single device

Speed is completely separate from the signal spectrum. Lots of household devices also run on the 2.4GHz spectrum, like microwaves and cordless phones, and will produce interference that can mess with your wifi signal. With regards to video streaming, you might get video stutter or completely dropped connections.

Is there a list of compatible apps? I believe the AMC app still doesn't support this?

My Firestick is so slow now after recent updates.

Can you explain? I do have 1900ac route, but I don't find many benefits over N so far, as my internet provider limits the speed at 40mps
