How does the consistency compare to coconut milk? I make a lot of thai curries, could this be used if I thinned it with stock or reduced it?

I've read that some Thai restaurants will use coconut cream instead of milk to make their curries silkier and creamier. You should be able to make a curry just fine with it; however, adding stock may just end up diluting the behavior and reducing it will just make it thicker.
