Shun is a good brand, generally, but this type of assembly sounds like it is their bargain line. I'd spend a little more for a set of forged knives.

If it were my money, I would rather invest my $200 in the Global set from Sam's. I couldn't replicate the deal near me, but that's a hell of a deal if you can get it! They are available at Costco as well, but at a price of $250. Happy hunting.

$250+tax for Seattle, Wa in store. $50 off. A good shun chef knife is $250 so these are obviously their budget line. They have a VG10 core but as mentioned, not the highest quality manufacturing. I'm sure with a good stone and strop these will shave hair just fine. Even a $10 "high carbon" chef knife from Amazon can shave like a razor. the VG10 is the most exotic steel you will find in mainstream cutlery. That said, the chef knife is probably matched by a $40-80 brand pending the quality and the rest is distributed to other knives, the brand, and fancy finish. Would be nice to see some of the next-gen CPM steels in $200 "budget" sets.

I'm willing to bet your edge will be exactly the same in a year of use and will solely come down to how well you can maintain the edge. The Costco set has a pretty cheap feel to the polymer. I rubbed my nail on it a few times and pulled some under my fingernail. These will need to be well taken care of, hand washed, etc. I bet they will look pretty beat up in the average kitchen a few years down the road.
