SSD. SSD basically always faster. It's very noticeable. This short video gives a really good explanation [youtube.com]

This is a pretty darn good deal if you need a 15.6" incher. The processor isn't fast, but it's got a lot of RAM and an SSD, so that's a plus

I have always heard HP horror stories from >2010. Have they shaped up any in customer service and build quality?

Not especially. I'd prefer an i5 over i7 or AMD for battery and speed. I've never tried a docking station or external monitors, but I'd imagine it would be simple. They're made for the online only experience and don't bog down like PCs or cost a ton like Macs...

I've had a couple of HP laptops over the past three years that have both lasted and still work great. I'm in the market for another and looking specifically for HP. I've been burned by three different Dell laptops so I'm never buying a Dell. I know this is anecdotal but I've had great success.

I'd avoid pre-Ryzen AMD CPUs on laptops these days. The IPC on those are comparable to the later core 2 duos, and it kinda sucked in terms of power efficiency. They were also stuck on 28nm (worse than ivy bridge) until they were able to hit a 14nm FinFet deal for Ryzen.
