The 3GB VRAM is certainly a limitation so you won't be able to play Ultra @ 60FPS in all games. For example, in Rise of the Tomb Raider, the highest quality textures require more than 4GB of VRAM. I got an Asus Dual GTX 1060 3GB for cheap on BF and it plays Rise of the Tomb Raider @ 60FPS with everything bumped up to the max besides the textures and anti-aliasing. For Rocket League, it runs at around 150-200 FPS for me at max settings.
If you have the money, then go for the 6GB variant. Personally, I don't think it's worth it unless you're gaming at 1080p+, but it's up to you.
Also, this specific model is not the best in terms of the cooling system so it might run a bit hot. I would wait for the EVGA 1060 SC or a dual fan version to drop down in price and then jump.
